Chef Rey Tovar prepared a lovely dinner typical of The Madison: Lobster & prawn handmade three inch raviolis, with a lobster bisque; Baby arugula & duck confit salad tossed in a lemon vinaigrette with strawberries, goat cheese, garnished with candied walnuts; The entrée Lamb Wellington was served with herb roasted Yukon Gold fingerling potatoes with turned vegetables and a mint lamb reduction sauce;
